Our favourite these days is Zucchini and Beetroot sandwiched between soy and linseed bread.
Ingredients for this creation:
1 zucchini, cut length ways & roasted
2 tsp Beetroot and Almond Dip (Pilpel)
Handful Rocket
2 tbsp vegan mayonnaise
2 slices soy and linseed bread
This is a great take on the over ordered and over eaten roasted vegetable sandwiches!
